Home Made: Spaghetti Sauce

Meatball Penne w/ Home Made Spaghetti Sauce


While I was shopping at Sam's Club earlier this month, I noticed that I could purchase Large #10 size cans of tomato sauce and diced tomatoes.  I guess I knew they were always there, but this time I was excited and couldn't wait to get home and make a huge batch of Spaghetti Sauce.

I found some items that I had in the fridge and pantry.  I didn't have the ingredients for a proper mire poix (carrot, celery, and onion), so I just used carrots.  In addition I had garlic, bay leaves and oregano.  I also added 1/4 cup of sugar to the entire batch as it was simmering.

I chopped the carrots and sauteed them in olive oil for about 5 to 10 minutes.  I added the oregano and garlic and turned off the burner.  I do this so my garlic doesn't burn.  Next I added the full 105 oz can of diced tomatoes stirring to combine with the aromatcs (carrots, herb, and garlic).  I turned up the heat to medium and added 10 bay leaves, along with the can of tomato sauce.

Eventually after the sauce came up to a boil I dropped the heat to low and let it simmer about two hours stirring every 20 minutes or so.

This was really fun and easy to do.  I just used what I had on hand (except for my Sam's purchases) and made a great sauce for pennies.  I served this up for dinner in my penne (pic above) dish and the family loved it.  Stay with me this project is not over.  Tomorrow I plan to can the sauce into pint jars. Scrappy Summer Sundays Week 1 & 2

So I have been kind of MIA for a while... Since January yikes, its worse than I thought.  The Cake Spinners and my hobbies have taken a backseat lately.  I have been working hard to try and graduate from school.  I have been pursuing a Bachelor in Culinary Management since July 2010, and it is beyond time for me to get serious about my senior project coursesAlthough I have been working hard, family, and charity work have been taking it's toll.

Well I'm coming back this summer to bring you a cute little summer mini album similar to the December Daily.  There is anywhere from thirteen to fifteen weeks of summer for us, so I will be bringing weekly posts of this album. 

I have made this album with scraps from a previous project.  I used eight scraps that were approximately 8'X5", and 5"X2.5".
 I folded each scrap in half horizontally and wove the pages together by cutting a 2.5" slit along the fold line of each 4"X5" folder, and inserted the smaller scraps.

This made it easy to bind the pages together and space the pages apart for heavy embellishment.
Here is a look at my first two weeks of the summer.


As you know if you have seen my December Daily, I love the Instagram format.  So I usually make small albums and print small pictures.  This time around I decided to try out Walgreens new 4X4 printingI did have an issue with the pictures I ran through Framatic.  The outside frames did not show up in their printed format.  So I have decided to continue this project without using Framatic.

Stay tuned, next week I will go through how I finished the construction of the book, and built up the pages.

December Daily Final 2013



Well, I finally finished my December Daily.  Check it out in the video below.

 
As usual I lost it around the 15th.   I just get super busy, every year.  I was still taking pictures and editing them, but I wanted to spend time with my family instead of scrap booking.  That is what truly matters to me during the holidays.
